Here's the scoop:
Irish Roots, American Twist: In Ireland, traditional St. Patrick's Day fare was more likely bacon or pork. Irish immigrants arriving in the US found corned beef, a cheaper and more readily available alternative, especially from Jewish delis in NYC.
"Corned" What? The term "corned" refers to the large grains of salt, or "corns" of salt, used in the curing process. This method preserved the beef, making it a staple.
