We are Audubon 'bird friendly' certified meaning we raise our cattle using regenerative grazing practices to regenerate our western slope ecosystem, build soil, and ensure healthy livestock and wildlife. We pride ourselves in offering a no-stress field harvest where our butcher comes to the ranch to harvest the animal in the field. This means no stress from transporting. Our butcher can also accommodate low histamine diets by cutting and freezing your beef within hours.

For the sirloin tip roast, our recommended menu applications include: Slice thin for Philly cheese steak and roast beef; cut thicker for Swiss steak; cut into cubes for soups/stews. This boneless, lean cut is great value. Best when roasted and carved into thin slices. 

The sirloin tip toast cut comes from the round primal of the cow which home to lean, inexpensive cuts that come from the rump and hind legs. The muscles in this area are used for movement, so the beef is leaner.
