We are Audubon 'bird friendly' certified meaning we raise our cattle using regenerative grazing practices to regenerate our western slope ecosystem, build soil, and ensure healthy livestock and wildlife. We pride ourselves in offering a no-stress field harvest where our butcher comes to the ranch to harvest the animal in the field. This means no stress from transporting. Our butcher can also accommodate low histamine diets by cutting and freezing your beef within hours.
For the T-Bone steak, our recommended menu applications include: Center of the plate steak entrée; fan off the bone and serve for premium presentation. Smaller than the Porterhouse, but delivers the same optimal tenderness and satisfying flavor – all in a lean package that’s ready to be grilled or broiled.
The T-Bone steak cut comes from the loin primal of the cow which is the area below the backbone is home to some of the most tender and popular cuts of beef.
