Enjoy our 100% Grass-fed and finished without any antibiotics or hormones, skirt steak! We are Audubon 'bird friendly' certified meaning we raise our cattle using regenerative grazing practices to regenerate our western slope ecosystem, build soil, and ensure healthy livestock and wildlife. 

For the skirt steak, our recommended menu applications include: slice thin for steak entrée, sandwiches, fajitas, tacos, pasta topping and salads. Marinate and grill hot for fajitas or use for stir-fry. 

The skirt steak cut comes from the short plate primal of the cow which is the section right under the rib primal with a higher fat content.
